5 Paleo Dishes for a Summer Cookout

While all your friends are cooking hot dogs, baked beans, and corn on the cob – you might be feeling a little left out. But there are tons of yummy paleo options that still feel summery. So here are 5 paleo dishes for a summer cookout:

1. Mahi Mahi Mango Ceviche Tacos

I’m a big ceviche fan – and the best summer ceviche includes mango. The recipe recommends using Siete tortillas – made with almond flour or coconut flour. You can buy them here. There’s lemon, avocado, cilantro, pepper, onion, mango, and jalapeño – basically everything good and summery.

2. Lemon Basil Grilled Shrimp Skewers

If it’s on a skewer, it’s cookout-approved. This recipe doesn’t even feel “paleo” because its so good. Grilled shrimp is one of my favorite things to eat in the summer, and this simple recipe uses lemon juice, garlic, mustard, and basil to flavor the meat. I’ll take three skewers pls.

3. Paleo Jalapeño Chicken Burgers with Guacamole

This is a super simple burger – using cilantro, onion, garlic, cumin, and a few spices to create this bliss. Pair it with guacamole, and you are golden. Who needs buns when you have guac anyways?

4. Carrot Ginger Granita with Cucumber Topping

Until now, I didn’t know what a granita was. But it’s basically a frozen piece of heaven for a cookout. This recipe uses carrot juice, ginger, coconut water, lime, and cucumber to create the perfect frozen dessert. Not too sweet, it’s like a healthy shaved ice.

5. Honey Grilled Watermelon

The original recipe is for a caprese salad, but just remove the dairy, and you’ve got a killer dessert. Grilled peaches are also a yummy option, but this is a nice twist to try at your next cookout.
